Barbara's Overnight Breakfast Casserole

This can be made the night before. The measurements are all approximated as I usually just eye-ball the ingredients as I add them, but the amounts listed below should fill a 9 x 13 inch baking dish.
18 eggs
2 cups or more shredded cheese (I use lots of swiss - just use your favorite)
1 lb frozen hash browns (loose ones or break up the patties)
meat of choice (diced ham or crumbled pre-cooked bacon or sausage, etc.)

Optional: sauted onions, peppers, actually anything you might want!

Mix all ingredients in large bowl making sure to coat everything with the eggs. Mix well! Dump into greased/sprayed 9 x 13 inch pan. Cover with foil and put into fridge until ready to cook. Heat oven to 375, cook for 45 minutes to 1 hour, or until knife inserted into center comes out clean. If you want a "browned" top, cook last portion of time uncovered.

This is a VERY liberal recipe! I usually half it and still have leftovers. You can basically add anything you want, as much or as little as you want. You just want to make sure you have enough eggs for everything to "stick" together.
