Balsamic Chicken Breasts
This is one of my family favorites and it's pretty easy. I got the original recipe off of pricechopper.com, but adapted it 'cause dh doesn't like mushrooms. I've included our favorite sidedish as well.*
In a large skillet, heat the oil over medium high heat. Add the chicken and cook until browned on one side, 3-4 minutes. Turn the chicken, add garlic and veggies. Continue cooking for 5 minutes. Add broth, vinegar, salt, pepper and thyme. Cover tightly, reduce heat to medium and cook for an additional 10 minutes, turning the chicken occasionally. Remove chicken to platter and keep warm. Raise heat to medium high, cook for 5 minutes until pan juices are reduced. Serve over chicken.
