Baked Tofu Casserole

This is really yummy in a comfort food sort of a way. Serve over rice.
INGREDIENTS
- -1 pkg. Firm or extra firm tofu
- -3/4 lb. ground pork
- -1 chopped onion
- -2 cloves garlic, chopped
- - 1 t. fresh ginger, grated
- -1/2 cup shitake mushrooms(fresh or reconstituted dried)
- -1/4c. Bamboo Shoots
- -2 eggs, beaten
DIRECTIONS
-Brown pork and add s&p to taste.
-Add onions and sauté for a few minutes, then add garlic and ginger.
-Add mushrooms, and bamboo shoots, sauté.
-Combine soy sauce and sugar and pour over mixture in pan, stir together.
-Slice tofu in cubes and place in bottom of a casserole.
-Put pork mixture on top of tofu.
-Pour beaten egg over the top.
-Cover with foil or lid and bake for 45 minutes at 350 degrees.
