Baked Potato Soup

COMFORT FOOD WARNING********I am absolutely in no way responsible for any weight gained due to the consumption of this soup!
INGREDIENTS
- 5-10 lbs potatoes
- 1/2 stick butter
- 2 packets of onion soup mix
- ham steak (diced)
- frozen peas(10 oz)
- carrots
- whole milk
- heavy whipping cream (Can't you hear your arteries already?!)
DIRECTIONS
Peel and dice the potatoes
Boil the potatoes until the water turns SUPER mucky
Dump most of the water after the spuds are hot
Return spuds to pot
Cover with whole milk and whipping cream (I used a pint of wc and the rest, milk)
Stir in Onion Soup Mix, sliced carrots and frozen peas, butter and ham and simmer all day on low.
Serve topped with green onions, and because we just don't have enough fat in there yet....shredded cheddar cheese.
We also do cornbread with it!
