Fresh Asparagus w/ Lemon Butter

INGREDIENTS

  • 1 bundle fresh asparagus, rinsed &  lower appx 2 inch ends snapped off
  • melted butter (microwave a few seconds)
  • small squeeze of lemon  (about 1 tsp or so/less)
  • salt and freshly ground pepper to taste

DIRECTIONS

Set trimmed, rinsed asparagus in a pan of water that covers spears about an inch or so. Cover and bring to a boil. Once boiling, lower heat to medium. Cook only until tender, probably no longer than 4 minutes (?) You don't want to over cook it. You can check how easily a fork pierces it at 4 min. Drain well. Put melted lemon butter in the pan the asparagus came out of. Put the asparagus back in and salt and pepper to taste. Gently stir the asparagus around to coat. Plate up and eat straight away!
