Apricot Chicken

I got this one after it won my work food tasting contest. So great!


  • Wet mix:
  • 2 eggs
  • 2 t Soy sauce
  • 2 T water

  • Dry mix:
  • 1 c. seasoned bread crumbs
  • 1/2 t garlic powder

  • Apricot sauce:
  • 1 small jar apricot preserves (or 1/2 of a large jar)
  • 2 T soy sauce
  • 1 clove of chopped garlic
  • 1/2 c. water


Cut the chicken into strips. Dip in the wet mix and then the dry mix to coat. Fry with 2-3 T oil until golden brown. Pour the Apricot sauce over all. Reduce heat to medium-low and cover pan. Cook until chicken is fully cooked (approx. 10 min?).

Serve with rice, peas & corn.
